Grilled Cheese with Bacon

You had me at hello.

From Food Network.

This food has virtually no redeeming nutritional qualities, aside from some protein.

8 strips bacon (it calls for thick-cut, maple-glazed. Delicious, I’m sure, but I had leftover Oscar Mayer and it was great.)
2 Tbl butter + more as needed (or however much you need to make sandwiches – I skimped on this)
8 slices sourdough bread (our grocery online had this mini-loaf, so I made mini-sandwiches; would have been easier with a normal-sized loaf of bread)
12 oz shredded cheddar (or cotswold, but that sounded awfully fancy)
4 Tbl Thousand Island dressing (this is KEY)

Cook the bacon in a large nonstick skillet over medium heat until crisp, about 8 minutes. Remove and drain on a paper towel-lined plate. Wipe out the skillet.

Heat the butter in the skillet over medium heat. Add 2 bread slices. Top each with one-quarter of the cheese and 2 strips bacon. Spread 2 bread slices with some of the dressing and press them on top of the sandwiches, dressing-side down. Cook until the cheese melts and the bread is golden, 3 to 4 minutes per side. Repeat to make 2 more sandwiches, adding more butter as needed.
