Cheddar Chicken

I’m so sad that it took me so long to discover this amazing, super-simple recipe. Made from things I virtually always have in my kitchen. And that my children ate. From here.

It’s similar to this chicken recipe, but even easier. And maybe even better.

16 buttery crackers, like Ritz, crushed
4-6 oz shredded cheddar (original calls for 6, but that’s too much in my opinion)
1 clove garlic, pressed or finely chopped
Kosher salt and black pepper
4 6-oz boneless, skinless chicken breasts
3 Tbl melted butter (original calls for 4, but again, 3 is plenty)

Heat oven to 350. Line a baking sheet with foil and spray the foil with non-stick spray. On a plate, combine crackers, cheese, garlic, and 1/4 tsp salt and pepper.

Dip the chicken in the butter, then in the cracker mixture, pressing gently to help it adhere. Place on baking sheet.

Sprinkle any remaining cracker mixture on the chicken and drizzle with any remaining butter. Bake until the chicken is golden brown and cooked through, 25-30 minutes.
