Pepper Brie Bites

I’m not quite sure where I found this recipe, but I tried it this weekend and it was so good!

Here’s what you need:

2 packages of phyllo dough tartlets
approx. 3 oz brie – I used Schnucks’ brand domestic
red pepper jelly
a handful of roasted, salted almonds, chopped

The instructions say to thaw the tartlets, but really, that’s not necessary. If you get them out and arrange them on a cookie sheet, and then scoop about a 1/4 tsp of pepper jelly into each one, they’ll thaw plenty. You also need to cut the brie in small pieces (or, in my case, because the brie was so creamy, it couldn’t really be cut, but rather was scooped – and don’t be afraid of using the rind, it’s fine) and put it in the tartlets, and then top with a few small almond pieces.

Bake them in a 350 oven for about 5-6 minutes, just until the brie is melted and they are warm throughout. Then chow down! These are delicious…I’ll definitely be making them again.
