Quick Pesto Orzo

This was a little side dish suggestion at the top of this chicken recipe. I made this on Friday night, and to my great surprise, Luke and Bennett ate it and LIKED IT.

Mix 1 cup cooked orzo pasta with 1/4 cup prepared pesto (I always just buy mine; I’ve never made it before). Sprinkle with parmesan cheese.

THAT’S IT!

If you’ve read this blog for long, you know that Matt and I put leftovers into a wrap quite often. Well, this made great Saturday lunch wraps, combined with leftover Pecan-Crusted Chicken.

    i grow so much basil during the summer that i make and freeze pesto all summer long. i am going to make something similar to this with penne and add shrimp for jastin and i. i will have to try this one as well.
