Balsamic-Garlic Chicken

I found this one in Southern Living…they have SO many great recipes!

The kids just ate the chicken without the sauce, so this was eaten by everyone. Hooray! And, it was easy and made with things that I generally have on hand. I made some very slight changes to reduce fat and I don’t think you’d notice vs. the original.

4 (6-oz.) boneless, skinless chicken breasts (they don’t have to be pounded flat, but if they are fairly uniform in size and relatively flat, they will cook more evenly)
1 teaspoon pepper
1/2 tablespoon butter
1 tablespoon olive oil
1/2 cup chicken broth
1/4 cup balsamic vinegar (I used golden balsamic)
1 tablespoon fresh lemon juice
3 garlic cloves, chopped or pressed (I’m lazy and prefer to press the garlic)
1 1/2 teaspoons honey

Sprinkle chicken breasts with pepper (salt, too, if you want, but it’s not necessary).

Melt butter with oil in a large skillet over medium-high heat; add chicken, and cook 6 to 7 minutes on each side or until done. Remove chicken, and keep warm.

Add chicken broth and next 4 ingredients to skillet, and cook 5 minutes or until slightly thickened, stirring to loosen particles from bottom of skillet. Serve chicken with sauce.
