Monster Cookies

I’m so happy I have this recipe…it’s in my mom’s handwriting! I’m pretty sure that this is the one that my friend Suzanne sent to me 2 Christmases ago.

These cookies were famous at our garage sales…every time we had a sale, my mom made time to bake this gigantic batch of cookies with us to sell. And we honestly usually sold out. They’re just so good. The full recipe makes 10-12 dozen if you make them as directed (which is really, really big).

So when our friends had the idea to do a small-group-kids lemonade stand to benefit Haiti, I thought of these cookies.

12 eggs
2 lb brown sugar
4 c white sugar
1 T vanilla
1 T Karo syrup
8 tsp baking soda (easier to measure: 2 T plus 2 tsp)
1 lb butter
3 lb creamy peanut butter
18 cups oatmeal (42 oz container)
1 lb chocolate chips
1 lb M&Ms

Preheat oven to 350. Begin by beating the eggs – mix all ingredients in order in a large container (we always used a big plastic storage tub). Use an ice cream scoop to put mixture on cookie sheets. Flatten with a spoon. Place 6 on a sheet. Bake 12 minutes, being careful not to overbake.

My mom’s note was that she usually made the cookies a little smaller and baked them for 10 minutes. I’m guessing she made them maybe 2/3 of the recommended size.

I thought the 10 to 12 dozen was a typo, then I saw 12 eggs! Does it halve easily?

It does halve very easily! Or even quarter. I made a half a recipe when I made them this summer and we had TONS of cookies!
