Alabama Cookies

So my friend Sharon makes these amazing cookies…and when I googled a couple of the ingredients from the recipe she gave me, I discovered that these are known as Alabama Cookies. Delish.

1 cup butter, softened
3/4 cup sugar
1 cup brown sugar, firmly packed
2 eggs
1 tsp vanilla
2 3/4 cups uncooked quick oats
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
1/2 cup Rice Krispies (the recipe says to crush them, so you can if you want, but I think the cookies are better with the crispy texture)
3/4 cup pecan pieces (not finely chopped; and if you like pecan halves, go ahead and use ’em!)
1/2 cup coconut

Preheat oven to 350.

Cream together butter and sugars. Add in eggs, vanilla and oats. Stir in last 6 ingredients.

Use an ice cream scoop to portion out the dough on ungreased cookie sheets…yes, this makes BIG cookies, but they’re best this way. Bake for 10-12 minutes.

These are absolutely the best served warm!
