Beans, Beans…You Know the Rest

Sorry to put that song in your head! Teach your kids…they’ll think you’re hilarious.

Last night I made this really quick bean side dish (that I found in Real Simple) to go with tacos and I think they were great! And so, so easy. I made a half a recipe for Matt and me to eat (knowing the boys wouldn’t touch them – though I did make them each try one, and no one passed out) and there were still leftovers.

Garlicky Pinto Beans
2 Tbl olive oil (I used less)
6 cloves garlic, sliced (this sounds like a lot, but it’s really not)
2 – 15 oz cans pinto beans, rinsed and drained
1/2 tsp dried oregano
salt and black pepper
4 scallions, thinly sliced

Heat the oil in a skillet over medium heat. Add the garlic and cook, stirring occasionally, until soft, about 1-2 minutes.

Add the beans, oregano, 1/2 cup water, 3/4 tsp salt, and 1/2 tsp pepper. Simmer, stirring occasionally, until the beans are heated through, about 4-5 minutes.

Stir in the scallions and serve!
