Chicken Salad

This is my mom’s chicken salad recipe, and it’s the best!

7 cups cooked, chopped chicken breast (about 3 1/2 lbs)
1 cup finely chopped celery
3/4 cup finely chopped onion (I use a little less than this)
1/2 cup relish (again, I use a little less)
red grapes, halved
2 Tbl lemon juice
2 – 2 1/2 cups light Hellmann’s mayo
salt & pepper
3/4 cup chopped pecans
halved grapes, optional

Mix everything together except pecans…mix them in just before serving. This makes a TON of little sandwiches for a baby/bridal shower. I usually make about a 1/3 of a recipe when it’s just for us to have around the house.

    I make something very similar to this but it has dried cranberries in place of the grapes.

    Ever since Nicole’s mom made this for Nicole’s baby shower 6+ yrs. ago, it’s the only chicken salad I make! (I don’t like relish, so I just put in a very small amount, but it adds to the flavor, so I don’t leave it out.) This is THE best!
