Oriental Slaw

AKA Better get some now before Matt eats all of it.

It’s a standing joke in our family that Matt has to be last in line when this is made, because he will eat a ridiculous portion of it. He makes it his main course instead of whatever is supposed to be.

This is great for summer cookout – it just tastes good with grilled foods alongside it!

1 lb. shredded cabbage
6 chopped green onions
2 packages chicken ramen noodles
3 oz. sliced almonds
3 oz. sunflower seeds (kernels)

Crush the noodles and brown them in a pan with the almonds. Mix all ingredients above together. Then, make the dressing:

¼ cup vinegar
½ cup oil
½ cup sugar
Chicken flavoring from noodles

Mix together and pour over salad 30 minutes before serving.

    Hi, it’s me again. The lady with the questions. 🙂

    Do you brown the noodles and almonds in the oven or on the stovetop?

    What kind of vinegar do you usually use? Red? White? Does it matter much?

      Bring on the questions…no problem!

      I’ve always used white vinegar. Though I suspect it wouldn’t matter much.

      My mom always just browned the noodles and almonds in a pan on the stove….though the oven would probably be fine, too.

    I make this ALL the time. It’s great for a mom’s lunch w/ kiddos during the week too!

    I do it a little bit different though….I use broccoli slaw instead of cabbage. I also use oriental ramen noodles and just crush them over the salad at the very end vs. browning them. Just another variation to a yummy salad!

    Oh….to make this a main dish for lunch I add cut up grilled chicken to the salad. Didn’t realize that wasn’t in the original recipe!

    I’ve made this both w/ regular shredded cabbage & w/ the broc slaw as Sonya mentioned–both delicious. I just shake my head to think of all the things Matt loves to eat now that he would have run for the hills from if he’d seen on his plate when he was a kid!!!
